Freezer Meals for Mamas to Be: Meatloaf

A few weeks ago, a new mom gave me a tip to start freezer cooking or preparing meals ahead of time to freeze and make after baby is born. I thought what a great idea! Why not use the time I have now to get the ball rolling so we can enjoy as much time with our son while not having to worry about grocery shopping or what to eat.

So here is my plan.

I am due to give birth in 15 (will be 14 to go on Monday) weeks. I will make one freezer meal each week until I give birth (I might actually make a couple a week towards the end when I hit that infamous "nesting" stage.)

I started my first freezer meal yesterday for my 15th week: Lean Sirloin Meatloaf.

You will need:
1lb lean ground sirloin (98% lean or greater)
1 bell pepper
1 egg
1/2 cup oats
1 onion
Dales sauce
Garlic Powder, Salt, and Pepper to taste

Directions:
Mash up all ingredients in a bowl like below (you will have to cut the veggies into small pieces).

Form into a loaf and wrap the loaf tightly in tinfoil.

Store in a ziplock freezer bag (1 gallon), mark date and directions.

All done!

I will post next week's after I plan on what it will be! I hope to make most of these crockpot or oven friendly
